Evening at the pool

Nyama choma is straightforward. Meat, salt, fire. The places that complicate it are the places to avoid.

What to order

Goat is the standard, and rightly so. Ask for it medium — well-done turns it into a chew. Kuku is the second pick if the goat is gone. Beef rib comes in third, in our opinion. Skip the chicken wings; they are an export from somewhere that isn't here.

What to skip

Skip anywhere that has a laminated menu. Skip anywhere that asks how you want it cooked in a tone that suggests they have options beyond meat-and-fire. Skip anywhere where the grill is indoors.

Where to sit

Outside, with a view of the grill if you can. Tables under the bougainvillea are the prize seats — request one when you walk in, even if there is a queue. Bring small notes.

We grill on Friday nights here at the hotel — same rules apply, except you don't have to leave the gate.
